The Menu

• Course 1, paired with Moab Select Tripel: Brie wrapped in puff pastry with house-made apricot preserves, crab, and poached red Bartlett pear
• Course 2, paired with Moab Select Black Imperial: Spiced pork belly with fresh watermelon, smoked cheddar, balsamic maple glaze, and crisped apple
• Course 3, paired with Scotch Ale: Chilean sea bass basted in fresh herb butter with shaved heirloom carrots, parsnips, and fennel, finished with a herb-infused honey drizzle
• Course 4, paired with Moab Select Export Stout: Dark roasted Belgian chocolate cake with brown butter frosting, crème anglaise, chocolate ganache, and Luxardo cherries
